Tom Hudson dinner at fforest farm

We’re proud to celebrate our own Head Chef, Tom Hudson, at fforest farm this autumn. Before joining us, Tom cooked at Tommy Banks’ Abbey Inn and spent many years in Helsinki, where he honed his love for seasonality and inventive techniques.

Now at fforest, Tom is steering our restaurant ever closer to Welsh traditions. Often found poring over old Welsh cookery books, he draws inspiration from deeply rooted methods and flavours, blending them with modern but humble techniques. The result is food that feels both timeless and fresh, grounded in the land around us.

The gardeners love his passion for using absolutely everything they grow in the gardens, fields and hedgerows. Nothing is wasted and everything is celebrated.

Festival of Light / Gŵyl Y Gorau - Lantern Parade

On Thursday 5th December, Cardigan comes alive with its much-loved Giant Lantern Parade – a real festive favourite. Over 300 hand-made lanterns will be carried through the streets, filling the town with light, music and a wonderful carnival spirit.

If you can’t make it that evening, you can still soak up the atmosphere with a light trail across the town from the 30th November - 20th December. Lanterns, illuminated artworks and the Christmas lights will all be on show after dark, adding to the seasonal glow.

With a focus on French nose-to-tail cooking, Camille has earned a reputation for bold, thoughtful food that celebrates whole-animal eating, seasonality, and the convivial spirit of the French bistro.

Elliot and his small team will join us at the Cedar Barn for a unique evening of food and wine. Together they’ll present a special menu built around French traditions of nose-to-tail eating, paired with a carefully chosen wine list that reflects Camille’s vibrant and unpretentious style.

This event is part of our guest chef series at fforest farm, bringing celebrated chefs and restaurants to Wales to share their craft, spark conversation, and gather people around the table in the spirit of hospitality.

The Craft Festival Wales will be held at Cardigan Castle from September 5th to 7th, 2025.

The festival is expected to attract thousands of visitors and will feature over 80 makers, demonstrations, exhibitions, workshops, and more.

Additionally, a Town Craft Trail will run for a month, showcasing emerging Welsh makers at various venues across Cardigan. Including an installation outside The Albion Aberteifi.

We’re honoured to welcome Bryn Williams, one of Wales’ most celebrated chefs, to fforest farm this summer. Hailing from Denbigh and with a career that spans some of the UK’s most prestigious kitchens, from Le Gavroche to his own acclaimed restaurants in Wales and beyond, Bryn is a true champion of Welsh produce, sustainability and seasonal cooking.

Bryn is best known for his much-loved restaurants, including Bryn Williams at Porth Eirias on the north Wales coast which celebrates his passion for honest food rooted in the landscapes of Wales.

On Saturday 12th July, Bryn will join us at the Cedar Barn for a very special evening: a set three-course menu inspired by the landscapes and larder of Wales. This event is the first of a series we hope will grow into a regular celebration of Welsh food and chefs, bringing people together over great food and warm hospitality.

Barley Saturday / Sadwrn Barlys

Since the 19th Century Barley Saturday has been held on the last Saturday in April – it is an unique event in Cardigan. Historically Barley Saturday saw farmers from the surrounding area come to town to hire workers and to inspect stallions that are put out to stud.

These days the horses are the centre of attention. After the judging of various horse competitions, the crowds gather to watch the horses do their parade around town. Followed by a parade of vintage cars, motorbikes, tractors, carriages, milk floats and gypsy wagons.

It really is a great day out and the town is heaving with people and a great atmosphere!

Pizza Pub @ The Castle Inn - The fan fave Pizza Tipi has moved to our cosy pub for the winter. Expect rustic pizzas, open fires, the finest beers, and great vibes.

Join us in Cardigan this festive season for the annual Festival of Light and Lantern Parade! This joyous event features a parade of colorful lanterns through the town's historic streets, accompanied by festive music and carolers. The festival celebrates the spirit of the season with a magical glow.

After the parade, warm up at our cosy hotel and enjoy Welsh songs & Christmas carols performed by local group The UPbeat Choir. Sip mulled wine or hot chocolate under our new canopy, as you listen to the beautiful harmonies fill the air. It's the perfect way to immerse yourself in the festive cheer.

There will be fireworks by the river from 8pm at the end of the parade.
